Take one slice of Herman Brot® Lower Carb Bread and toast
In a jug whisk eggs together until smooth.
In a good quality non stick frying pan tip the egg mix. Let settle before gently breaking apart with a spatula. Keep following this pattern until the mix is all cooked through.
Spoon eggs over toast and top with smoked salmon slices
Garnish with coarsely chopped flat-leaf parsley
