Pasta with Asparagus + Creamy Mushroom Sauce
Ingredients (Serves 4):
Asparagus Mix -
12 stalks of asparagus
2 tsp extra virgin olive oil
2 gloves garlic, minced 1 pinch salt
Mushroom Sauce -
4 cups white button mushrooms
3/4 cup raw cashew nuts
1/2 cup water
4 cloves fresh garlic, minced
2 shallots, thinly sliced
1 and 1/2 tsp dried rosemary
1 Tbs ex1ra virgin olive oil
tsp salt
1 bag of Herman Brat® Lower Garb Pasta
Instructions:
Step 1: Cook pasta in boiling water for 10 mins
Step 2: Add all asparagus ingredients to pan and saute for 2-3 minutes. Set aside.
Step 3: Add all ingredients for mushroom sauce to food processor. Blend until creamy and smooth.
Step 4: When pasta cooked, drain and combine mushroom sauce and asparagus mix. Serve immediately.
